Truly Organic Baking, owned by baker Kari Ani Shiozawa, produces easy-to-use organic boxed mixes for muffin, scone, pancake, banana bread, pizza dough, and more. The products are organic, Kosher and vegan.  Recently, Shiozawa spoke with Greenopia. 

Truly Organic Baking was created in September 2006 and launched in April of 2007. The company holds several green certifications, including USDA Organic.  They are Women’s Business Enterprise Certified, Owned and Operated. You can find Truly Organic Baking products at Whole Foods, Safeway, Amazon.com, Costco and more.

For Shiozawa, the decision to promote organic good was all about health. “Our promise to the environment and our future generations is to promote and educate the importance of organic living. ORGANIC CORNMEAL COOKIES
Preheat oven to 350 degrees F.
You will need:

2 c Organic Unbleached Flour
¼ c Organic Flaxseed (ground)
1 c Organic Yellow Cornmeal
2 t Baking Powder
½ t Sea Salt
¾ c Organic Unsalted butter (1 ½ sticks), room temperature
? c Organic White Sugar (Evaporated Cane Juice)
½ t Organic Cinnamon, ground
2 T Organic Honey
1 t Organic Vanilla, extract
2 Organic Large Eggs, room temperature

ORGANIC CORNMEAL COOKIES
Preheat oven to 350 degrees F.
You will need:

2 c Organic Unbleached Flour
¼ c Organic Flaxseed (ground)
1 c Organic Yellow Cornmeal
2 t Baking Powder
½ t Sea Salt
¾ c Organic Unsalted butter (1 ½ sticks), room temperature
? c Organic White Sugar (Evaporated Cane Juice)
½ t Organic Cinnamon, ground
2 T Organic Honey
1 t Organic Vanilla, extract
2 Organic Large Eggs, room temperature

In a medium bowl, add the flour, cornmeal, flaxseed, baking powder and salt. In a Mixer, blend butter until smooth. Add sugar and vanilla and blend until light and fluffy. Add the eggs, 1 at a time to the mixture. Mix until incorporated. Add dry ingredients to mixture. Mix well.
Form dough into 1 inch balls. Press down slightly on each ball. Place on parchment-lined cookie sheet, about 1-inch apart.
Bake for 10-12 minutes. Drizzle honey over each cookie. Enjoy!
 

Yields: 2 dozen.
